This website is our temporary home on the web, as we develop
our new retail space and processing facility in Dover, New Hampshire.
In these pages you'll discover something about us, our history, our
farmer-partners, and the products we offer.
Who we are:
John "Popper" Medlin is an alumnus of the famed Cordon Bleu Culinary School, and is the driving force behind Poppers Sausage Kitchen. Apprenticed in Holland to a famed family of Charcuterie experts, John returned to New England and embarked on a search for the best available ingredients in the European tradition. No simple task these days.
Partnered with local producers, providing heritage and heirloom varieties, Poppers Sausage Kitchen seeks to provide authentic European selections, along with iconic American fare.
As we develop this website and move towards completion of our
new Downtown Dover, NH facility, we will feature the farms and
farmers who make this venture possible. We will explain why
sustaining and utilizing heritage breeds of animals is important.
How handcrafting our products from those animals, along with heirloom
varieties of produce and spices, results in that "Olde World Taste".
A taste that so often eludes commercial products.
So visit often; we hope to make your time here entertaining and
informative.

Explain the terms Heritage and Heirloom - why are they important?
Heritage breeds of animals are those which are nearly lost to
time. Heirloom is the term for plant varieties from
a bygone era.
What's of greatest importance is that they are free of laboratory
genetic manipulation, and while they may grow slower, or yield less,
they're also packed with flavor and texture crucial to our products.
Our pledge is to purchase from local, natural, free-range, and/or organic sources as much as possible. We trust our family farmers to provide us with the same wholesome quality as they serve on their own table at home.
